CHELSEA — It’s a challenge to present healthy and innovative kosher dishes to elderly people who love traditional brisket and kugel.
“I have no issues with kugel and brisket,” said Michael Millard, food service director of Cohen Florence Levine Estates and Florence & Chafetz Home for Specialized Care, two assisted living facilities operated by the Chelsea Jewish Lifecare. “But I’m adding carrot puree to the kugel to increase the amount of vegetables.”
